Okay, I'll admit it... I'm a recipe junkie. I collect recipes from far and wide, all the while knowing I will never be on this earth long enough to try all of them. (I'm the same way with sewing patterns, much to Hubby's dismay.) But I love finding recipes that are simple and easy and don't require a lot of ingredients, and I'm even more impressed with ones that are just right for 2 people instead of 20.
I started recieving a Kraft Foods magazine in the mail about 3 years ago, and although I haven't tried all of the recipes, the ones I have made turned out wonderfully. Some of you may already be familiar with this magazine- I think it's just the greatest thing ever. (And it's free!!) If you would like to sign up for the magazine, or get recipes by email, go to Kraft Foods to register. They usually email recipes once or twice a week - the magazine comes about 4 times a year.
I thought I would share one that came yesterday... I think Hubby will like this one since it has bacon in it, so it's going to be this weekend's special Saturday night football dish. Now if the Vols will only beat Georgia......
Bacon Cheeseburger Roll-up
Prep Time: 25 min.
Total Time: 50 min.
Makes: 6 servings, 1 slice each.
1 lb. lean ground beef
4 slices bacon, chopped
1/2 cup chopped onions (about 1 small)
1/2 lb. (8 oz.) Velveeta Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
1 pkg. (13.8 oz.) refrigerated pizza crust
Heat oven to 400°F. Cook ground beef, bacon and onions in large skillet on medium-high heat until ground beef is browned, stirring occasionally. Drain; return meat mixture to skillet. Add Velveeta; cook until completely melted, stirring frequently. Cool 10 min.
Unroll pizza dough onto baking sheet sprayed with cooking spray. Press into 15x8-inch rectangle. Top evenly with meat mixture. Roll up dough, starting at one of the long sides. Rearrange, if necessary, so roll is seam-side down on baking sheet. Bake 20 to 25 min. or until golden brown. Cut diagonally into 6 slices to serve.

Hi Paula, I just had to visit! I read your profile and laughed because we have alot of similar things in common. We live on a small farm in S. Calif. I read your profile to my hubby and said look here is another gal that farms and blogs. I told him how fun it is to meet new 'neighbors' that have similar likes as us. I'm a total recipe junkie, too! But I come by it honestly ~ my mother has a HUGE collection of recipe books!! I stopped allowing myself to buy recipe books and magazines after subscribing to Recipezaar, but I'm still constantly adding to my online recipe books. At least they don't take up any room in my kitchen!! I love getting Kraft's magazine ~ I actually wish it would come out a little more often.

I'mm with you. I need recipes to feed 2 people. I wish they sold bread in 1/2# loaves so we could finish a loaf! This one looks like a winner to me; kind of like a calzone only diiferent. I get the Kraft Family magazine and pass it around through the family. I have NOT seen this recipe but I do use alot of the recipes that come in the magazine--loke the ones that have different ingredients to change up meatloaf and chili, etc.

I've gotten that Kraft mag for a while also - it is pretty good and gives me ideas to jazz up things we already have in the household repertoire. I think I'd try this with our favorite pizza toppings - pepperoni, breakfast bacon, onions and mushrooms - yummmy - BTW - I have at last count 78 cookbooks and two large stacks of "valuable" magazines with ideas I want to try - let's see I'm in my 60's and only two of us in the house - how likely am I to make all that food? But sometimes it is just fun to think about right?
