Rainy day bakin'

Smokey warms his bones (and dries his paws) in front of the wood stove.

After making my afternoon rounds to the barn and the chicken coops, I came inside to try and get the wood stove going again. Today would have been a good day for my sewing machine to have been humming away, but once I came inside and warmed up I decided to bake instead. I found a wonderful recipe for some molasses cookies a few weeks ago and ever since then, Hubby has been eating them as fast as I can make them. How about we make some together!

Start off by preheating the oven to 350 degrees, then get 1/2 cup of butter, 1 cup of sugar, and 1/4 cup of shortening ready.



Cream the butter, sugar, and shortening, and add 1 large egg and 1/4 cup molasses to the mixture and mix well.


Meanwhile, in another bowl I've put the dry ingredients:
2 1/4 cups of all-purpose flour, 1tsp each of cinnamon, ginger, baking soda, and salt.



Add dry ingredients slowly to the batter and mix well. Batter should be sticky, but stiff enough to not stick to your fingers.



On the cookie sheets, sprinkle a small amount of sugar...




Then scoop out a walnut-sized ball of batter and roll in the sugar.


Once they're on the cookie sheet, sometimes I feel wild and sprinkle a little more sugar on the cookie dough. (*snicker* Our little secret, okay?)


Then, into the oven they go for 10-12 minutes...

And....

Ta-da!

  1. Those cookies look wonderful! We are really tired of the rain here too. Smokey looks really comfortable in front of the fire. My pets have been sleeping their lives away during the rainy days. Maybe you'll get a chance to sew this weekend. Take care.

  2. Molasses cookies are one of my favorites!!!! I've missed you! glad to see you are doing good and staying busy. I had to do the same for our rabbits. We have some in a pen on the ground and it rained so much that there was standing water in there :( I needed to get dirt in there pronto so they had somewhere to go. Poor things were pitiful but so excited when I got the dirt and wood in there for them to run, jump and play again. Blessings!

  3. Oh! I can almost smell those cookies! They look like they smell delicious! What a wonderful comfy and cozy smell that must be! I love the smell of fresh baked cookies!

    I hope your little lambie gets better soon! Poor lil' thing! Glad she's got a nice Lamb "mom" to take care of her in you!

  5. The cookies look delish!! I love molasses cookies, so I will have to try these. Your fire looks soo cozy. We finally have bright sunny skies after several weeks of rain.It is sooo cold, but no snow in sight. Hope your wooly gets better soon.

    Fresh baked cookies, a warm fire in the wood stove, and a respite from the cold outside world...sounds like an ideal home. Is the coffee on?

    So sorry to hear Lucy is under the weather..I sure hope she heals soon :)

    We've had rain rather than snow more often than not..I'm praying for snow..the weather man says tomorrow night :)...fingers are crossed!

Just a few more years until hubbie retires and we can build that farmhouse and barn that only exists in our dreams at the moment. Thank you so much for sharing your lives with all of us.     We have been doctoring our little dog as he has got ear infection and a cold. He don't care for the ear drops at all.

  18. The cookies look great and on a dark and dreary day, that and knitting are the perfect passtime. It's supposed to rain and then snow some flurries here tomorrow. I am so excited. I can't wait to smell snow in the air here at the beach. I baked biscotti on Thursday for those hot cups of tea that should be sipped on dreary days by the fire. I hope that your sheep heals quickly. I have no idea where you get all the energy to get things done! I am still working on Christmas knitting and spinning.

    we had a spitting of snow today and they say by wed. we should have measurable snow. get out that snow shovel.
    i got an early christams gift--a snugglie (sp) it is almost as delightful as a fire. naw-not even close but my son thought of me when he saw them on sale at menards.

  23. Mmmm....those cookies look incredible! I have a recipe that I think is pretty much the same, except you ball up the dough and dip it in a bowl of ice water before rolling them in the sugar. Not sure why, but they're delicious. As I'm reading my favorite blogs tonight, cookies keep coming up. Think I'm going to have to make a batch tomorrow.
